Cilantro Lime Chicken and Lentils
This dish is super easy and delicious! It is perfect for a cold winter night and my pro tip would be to add freshly ground salt to the top - even the top of each bite!!
Cilantro Lime Chicken and Lentils
What you'll need:
- 2 cups dried lentils
- 1 lb. boneless skinless chicken breasts (or thighs)
- 3 cups salsa verde
- 3 cups chicken broth
- 1/2 small onion, chopped
- 3 green onions, chopped
- 1/2 cup cilantro, chopped
- 3 cloves garlic, minced
- 2 jalapeños, diced (ribs and seeds removed)
- 1/2 teaspoon salt, plus more to taste
What you'll do:
- Add everything to the Instant Pot.
- Cook on high pressure for 20 mins. Quick release the steam. Stir it all up and add more salsa verde as desired.
- Serve with rice and a squeeze of lime!
- Alternatively, you can place in a crock pot for 3 hours on high or 6 hours on low or until cooked.
