Cilantro Lime Chicken and Lentils

This dish is super easy and delicious! It is perfect for a cold winter night and my pro tip would be to add freshly ground salt to the top - even the top of each bite!!

Cilantro Lime Chicken and Lentils

What you'll need: 

  • 2 cups dried lentils
  • 1 lb. boneless skinless chicken breasts (or thighs)
  • 3 cups salsa verde
  • 3 cups chicken broth
  • 1/2 small onion, chopped
  • 3 green onions, chopped
  • 1/2 cup cilantro, chopped
  • 3 cloves garlicminced
  • 2 jalapeños, diced (ribs and seeds removed)
  • 1/2 teaspoon salt, plus more to taste

What you'll do: 

  1. Add everything to the Instant Pot.
  2. Cook on high pressure for 20 mins. Quick release the steam. Stir it all up and add more salsa verde as desired.
  3. Serve with rice and a squeeze of lime!
  4. Alternatively, you can place in a crock pot for 3 hours on high or 6 hours on low or until cooked.
