Avocado Salmon Bowls with Pineapple and Mango

These avocado salmon bowls are delicious and you can use almost any spices and they still taste delicious! The lime, fresh mango and pineapple really add a lot to these delicious bowls.

Salmon Avocado Rice Bowl

What you'll need: 

  • 1 16 oz salmon filet or 2 boneless skinless chicken breasts
  • 2 mangoes, diced
  • 1 pineapple, diced
  • 3 avocados
  • cilantro
  • 4 tbsp lime juice
  • chili powder
  • oregano leaves
  • variety of Penzey's spices (or other spice mixtures)
  • ground cumin
  • crushed red pepper
  • tarragon leaves
  • basil leaves
  • smoked paprika
  • 2 cups rice, cooked
  • salt

What you'll do: 

  1. Put all spices on the salmon filet (or if you are using chicken, cut the chicken into cubes and cook on the stove. Add all spices and cook until done.)
  2. Cook salmon in the oven on 325 for 20 minutes or until done. Be sure to use your thermometer and take salmon out when the internal temperature is 145 degrees F. 
  3. Mix together cubed avocados, lime juice, and salt - set aside
  4. Put rice, salmon, pineapple, mangoes, and avocado mixture in a bowl and enjoy!
